Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.
We’re in week 23.
Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made.
Keeping with the summer vegetable theme I decided to look for a recipe with corn because it’s abundant right now! You can’t beat a tasty corn chowder in the height of summer.
White beans add a great source of protein and the beer, lime and hot peppers add lots of flavor. I especially love that half of the soup is blended for a thicker, creamier chowder.
Tuesday: Summer Pesto Couscous Bowls
Wow, this dish is SO FRESH! I mixed most of the pesto in with the pearled couscous because this girl right here is a pesto fanatic. The marinated zucchini and red onion had a delicious bite.
The sweet cherry tomatoes, cucumbers, avocado and mini mozzarella balls were added on top to complete this meal and it was a total winner in this house!
Wednesday: “Sausage” and Pepper Stuffed Summer Squash
The garden has been brimming with summer squash and while searching for recipes I came across these summer squash boats. I’ve had zucchini boats in the past but never with the yellow summer squash.
What a treat! I didn’t realize that this squash gets sweeter while roasting. Oh my goodness, so good!
Stuffed with sausage, red peppers, green peppers, onions and garlic in a tomatoey sauce topped with panko breadcrumbs for that perfect crunch. I substituted the sausage for Tofurky Italian sausage and the swap worked out amazingly well.
Thursday: Veggie Lomein
My favorite kind of meal – quick, easy and delicious! When I order Chinese food at restaurants it’s usually lomein so I decided to give it a try at home.
The trick here is to saute all of the vegetables separately so that they cook nicely before mixing everything together. I am getting requests to make this again asap.
Friday: Baked Tofu Nuggets
The crispiness from these tofu nuggets is unreal. First of all, I love that it’s baked and dare I say it seriously tastes like chicken nuggets… except better.
Over the years of being vegetarian I finally figured out that if you want a nice crispy tofu the best way is to buy super firm. Extra firm is ok but trust me on the super firm, it will make your life so much easier.
I made a simple side salad to go along with these nuggets for a complete meal.
