Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.
We’re in week 22.
Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made.
Making this zucchini pie is a great way to take advantage of in season produce, especially if you have a garden waiting to be harvested.
This dish reminded me of a frittata and it’s packed with vegetables like zucchini (obviously), tomatoes, mushrooms, red peppers, green onions and basil.
Tuesday: Veggie Cakes
Another delicious veggie filled recipe! These veggie cakes are made up of grated carrots, broccoli, zucchini and corn. They held together really well but make sure to squeeze all of the water out of the zucchini so you don’t end up with a soggy mess.
These little veggie cakes were served with a sriracha aioli dipping sauce and side salad. Alternatively, these could totally pass off as a veggie burger if had the hankering.
Wednesday: Easy Vegetarian Lentil Stew
I love an easy lentil stew, all of the flavors were there and everyone thoroughly enjoyed it. Any recipe that takes me 30 minutes or less and has flavor like this is golden.
Thursday: The Best Chili Recipe
Yum! Yet another easy recipe! The chili recipe calls for a whole cup of beer and I’m here for it. Why didn’t I think of that before? I don’t think I’ll ever make chili again without it!
To make it vegetarian friendly, I swapped the ground beef for Quorn Meatless Grounds and instead of beef broth I used Better Than Bouillon Vegetable Base. They were perfect substitutions and didn’t sacrifice an ounce of flavor.
Friday: Eggplant Flatbread
I am not typically a fan of eggplant unless it’s eggplant parmesan but this pizza caught me off guard. The three different cheeses, onion, garlic tomato sauce, basil and oregano all blended together really well.
I swapped the flatbread for good ol’ pizza dough because that is what I had on hand but it tasted great nonetheless.
