Weekly Vegetarian Dinner Recipes N°21

Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.

We’re in week 21.

Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made.

Monday: Mexican Street Corn Dogs

We were out in the wilderness camping for this one. It just goes to show how easy it is to make although we did use premade corndogs instead of homemade. The MorningStar Farms Veggie Corn Dogs taste just like the real deal.

I’ve never had anything “Mexican street corn” inspired but have heard about it for years so this was my first try. I loved it! Also, Cotija cheese was new to me too, it reminds me of a crumblier and saltier feta cheese.

Tuesday: Homestyle “Chicken” and Biscuits

I’ve made quite a few “chicken” and biscuits in my day and this one is perfection. I love the addition of the parmesan cheese in the biscuits. This is some serious comfort food!

I adapted this recipe to be vegetarian by swapping the chicken for super firm cubed tofu and it was delish.

Wednesday: Eggs in Tomato Sauce with Chickpeas and Spinach

The eggs were simmered in a really yummy tomato cream sauce, the chickpeas were a great addition for added protein and you can’t go wrong by adding a little spinach for good measure.

This dish was served with toasty buttered baguette slices and it was the perfect combination.

Thursday: The Best Broccoli Cheddar Soup

If you have ever had Panera’s broccoli cheddar soup then you know the stakes for re-creation are high. I kid you not, this broccoli cheddar soup recipe is even better!

I really liked the mix of different textures from the broccoli florets, stems and the carrots.

Friday: Vegetable Jambalaya

This jambalaya was definitely easy to make but I had a heck of a time trying to find black eyed peas and okra so I had to make some substitutions. The dish still came out great.

I swapped the black eyed peas for cannellini beans, okra for string beans and I cooked brown rice instead of white.

Another week of delicious dinners in the books! I’m sure you will find some lifelong favorites with these recipes. I know I have!
