Weekly Vegetarian Dinner Recipes N°19

Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.

We’re in the nineteenth week.

Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made.

Monday: Vegetarian Mexican Casserole

Yum! I’m a huge fan of Mexican food. This dish was nice and cheesy with rice, beans, enchilada sauce, corn and red pepper. It was served with sour cream and tortilla chips crushed on top. So good!

Tuesday: Quick and Easy Vegetarian Curry

Quick and Easy Vegetarian Curry

Quick meals are my jam as long as they don’t sacrifice in flavor. This curry was delicious! It has chickpeas, spinach, green peas, tomatoes, spices and Greek yogurt for creaminess. We served our curry over brown rice and everyone wanted seconds.

Wednesday: Crispy Cheese Gnocchi

These were amazing! I love gnocchi. The preparation for this gnocchi is totally different from what I’m used to doing and I have to say, I don’t know if I’ll ever go back.

Instead of boiling the gnocchi it’s cooked right in the skillet with butter. The shallots and garlic give these gnocchi the best flavor and the parmesan cheese completes it. They end up being nice and crispy on the outside and soft and chewy on the inside.

This dish was served with a side salad.

Thursday: Baby Lettuces with Feta, Strawberries and Almonds

Holy moly what an amazing combo! I never would have thought feta, strawberries and smoked almonds would mix so well together. The dressing is simple to make and so good.

It’s officially summer so strawberries are plentiful right now, take advantage. If you’re looking for a lighter, healthier dinner then this is it! I will definitely be making this on the regular this summer.

Friday: Vegan Impossible Meatloaf

Vegan Impossible Meatloaf

What? vegan meatloaf that actually tastes like meatloaf?! I couldn’t believe it. I haven’t had a meatloaf since I was a kid and this dish brought it home for me. Ketchup was lathered on top and it was served with a side salad to get those greens in.

It’s cool that there are so many options for plant based meats nowadays, it definitely broadens my dinner recipe horizons. I try to limit fake meat but when I do use it my favorites are Impossible and Beyond Meat.

In Summary –

Another week of delicious dinners in the books! I’m sure you will find some lifelong favorites with these recipes. I know I have!
