Weekly Vegetarian Dinner Recipes N°18

Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.

We’re in the eighteenth week.

Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made.

Monday: Creamy Vegetarian Pot Pie

This dinner is the ultimate comfort food. It is packed with vegetables that are swimming in a cheesy béchamel sauce and topped with puff pasty crust. Drool!

Tuesday: Mediterranean Orzo Salad

Mediterranean Orzo Salad

The orzo, crunchy vegetables, briny olives, creamy feta, spinach and simple yet delicious dressing is what makes this pasta salad so well balanced.

The flavors developed really well overnight in the refrigerator and leftovers were even better!

Wednesday: Easy Vegetarian Rigatoni Bake

Easy Rigatoni Bake with Pesto and Ricotta

This rigatoni bake with pesto and ricotta is so easy to make! It’s made up of creamy pesto ricotta, vodka sauce, mozzarella and topped with buttery Ritz cracker crumb for added texture and deliciousness.

Thursday: Chinese “Chicken” Salad

I try to incorporate different types of salads into my dinner menu as often as possible to lighten the heavier food days that I have.

This recipe is superb! Two different types of shredded cabbage, carrots, green onions and “chicken” served with crunchy noodles and a delicious Asian dressing.

Chicken replacement: Gardein seven grain crispy tenders. They were baked according to the package instructions and sliced into thin strips.

Friday: Pizza Quesadillas

These pizza quesadillas were super fast to make, I mean literally 5 to 10 minutes tops.

You take a flour tortilla, add toppings to one half, fold and cook for a couple minutes on each side. Slice and serve!

Everyone enjoyed these and they truly had all of flavors of pizza. We added sliced mushrooms and green peppers to ours.
