Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.
We’re in the seventeenth week.
Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made.
I love nachos! These nachos are perfect and loaded with all the yummy toppings you could ever think of. They were whipped up in 20 minutes and devoured in 2. This dish is definitely a crowd pleaser!
Another quick and easy recipe and oh my goodness… it’s amazing! Cheese tortellini, tomato sauce, vegan Italian sausage and veggies make up this dish. I love that it is SO delicious even with the small amount of ingredients. This is one of the best recipes I’ve made all year and will definitely be saving it to my favorites.
The recipe calls for normal Italian sausage so I swapped it with this vegan Italian sausage and it was absolutely delectable.
Wednesday: Old Bay Clamless Vegan Chowder
I could not believe how closely this resembled classic clam chowder! The creamy base is made up of cashews, russet potato, white beans, miso and nutritional yeast. Everyone was blown away that it was vegan.
This recipe calls for yuba sheets. I had no idea what that was so I cubed up some super firm tofu and threw it in as a replacement. It was a great swap for texture. The chowder was served with oyster crackers because I can’t imagine having my chowder without it.
Thursday: Egg Roll In A Bowl
Egg roll in a bowl is basically a deconstructed egg roll and it has been trending for awhile now so I thought it was about time to give it a shot. It is very good and I love that it’s low carb. Shredded cabbage, “turkey”, carrots, onions, garlic and scallions are what make up this dish.
I swapped the turkey for Morning Star Farms Grillers Crumbles and it was a delicious substitution.
Friday: Herbed Ricotta Pizza
Friday night pizza nights are my jam. This fresh vegetarian herbed ricotta pizza is the perfect recipe for spring. It has a nice crispy crust, herbed ricotta, creamy provolone cheese, zesty lemon and asparagus. A quick, easy and delicious dinner recipe that the whole family will love!
