Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.

Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made. Enjoy!
Monday: Pea, Leek and Lemon Risotto
I love the creaminess of risotto and this recipe is no exception. The peas and leeks are a great combo and the lemon really brightens the dish up. This risotto was served with a side salad.
Tuesday: Easy Hoisin Glazed Tofu
A super easy vegan tofu dish that is high in protein, has a minimum amount of ingredients and a maximum amount of flavor! This simple yet drool-worthy dish is made up of crispy tofu, green onions, hoisin + soy sauce and served over rice.
Wednesday: Easy Asparagus Tart
Our neighbor came by this past weekend and generously gave us a bundle of asparagus from her garden and I knew I had to find a recipe worthy of these delicious fresh picked spears. This recipe was a homerun!
Something about the combination of Dijon mustard, gruyere and parmesan cheese just worked so amazingly well. I also love that this recipe literally has only 5 ingredients. Served with a side salad. So good!
Thursday: Malai Kofta
This is the dish I always order from our local Indian restaurant. There are so many different flavors and textures in this dish. Every bite is even more incredible then the last. There are definitely a few steps to this recipe but I will say it is worth the extra effort.
I tried baking the malai kofta balls in the oven for a healthier version but it was an utter failure so stick to frying! Although the flavor was still amazing even though they ended up a little softer than I would have liked.
Friday: Portobello Pesto Pizza
When I saw that this recipe called for provolone on the pizza I was intrigued. Never in my life have I had pizza with provolone. Let me tell you, it’s delicious and actually reminded me a lot of mozzarella. The earthiness from the mushrooms paired really well with the pesto and cheeses.
