Monday: World’s Best Salad Ever
This salad is absolutely delicious. It has everything you could want in a salad and it’s fairly simple to make.
Since I don’t eat meat I swapped the chicken and bacon for crispy baked salt and pepper tofu. The dressing was light and added that hint of cilantro which paired well with everything.
One-pot meals are the way to go on a busy night and any chance I can have less clean up, I’ll take it! This dish has all the veggies, beans, tomatoes and pasta.
We had a ton leftovers for lunch for a couple of days so it’s super economical which is a plus! I swapped elbow macaroni for cavatappi because it’s my favorite.
Wednesday: Zucchini Galette With Herby Ricotta
When I came across this photo I knew I had to make it! It was just beautiful. This galette is flaky, herby and creamy, what more could you ask for?
I have always been intimidated to make a galette because I convinced myself that it would be too complicated. It’s NOT! I couldn’t believe how easy it was to make.
We served the galette with a side salad for a more compete meal.
Thuursday: Hearty Vegetable Stew
If you’ve ever had beef stew before then this is basically it, without the beef. It’s a true comfort food and goes great with toasty buttered bread. I would say add a side salad too for more nutrition but I was feeling lazy and it’s a comfort food so we skipped it.
Friday: Vegan Italian Wedding Soup
I remember having Italian wedding soup eons ago for the first time at Olive Garden and thought it was the most delicious soup ever especially with those damn breadsticks. This vegan version is out of this world and I’m definitely adding it to my favorites list!
The little meatballs were so perfect! They are made with cauliflower, oat flour, lentils, flax eggs and Italian spices. You get all the right textures in this soup. Acini di pepe is the perfect pasta to add to the soup because it’s so easy to fill a spoonful and eat right up.

Another week of delicious dinners in the books! I’m sure you will find some lifelong favorites with these recipes. I know I have!
