Weekly Vegetarian Dinner Recipes N°14

Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.

We’re in the fourteenth week.

Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made. Enjoy!

Monday: Herbed Potato, Asparagus and Chickpea Sheet Pan Dinner

Another great sheet pan dinner! I love these because they are so simple to make on a busy night. The mix of roasted vegetables in this dish are perfect. I added cubed baked tofu for extra protein.

Tuesday: Lemon Zucchini Noodles

These zucchini noodles are drenched in a delicious cashew cream sauce, topped with artichoke hearts and bits of crunchy pumpkin seeds. Lots of B vitamins and antioxidants in the one!

Wednesday: Vegan Southwest Baked Sweet Potato

Oh my these are amazing! They are packed with red peppers, corn, beyond meat crumbles and topped with avocado and a cilantro crema. A filling, healthy dinner that is packed with flavor. Everyone in the family loved these!

Thursday: Crispy Brussel Sprout Kale Salad

I’m not usually a big fan of kale salads but this one was an exception. Everything in this salad was delicious. The Brussel sprouts, cranberries, apples, parmesan cheese, green onions and creamy honey mustard dressing were such a great combination of flavors and textures.

Friday: Deep Dish Falafel Pizza

If you’re a fan of falafel then you’re going to love this deep dish! This pizza has a base of tomato sauce and feta topped with banana peppers, black olives, tomatoes, falafels and red onion.

Finish the pizza off with freshly cracked pepper, pinch of red pepper flakes, tangy Greek yogurt sauce, harissa and parsley.
