Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.
We’re in the thirteenth week.
Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made. Enjoy!
Monday: Eggplant Rollatini Rosa
The flavors are delicious in this eggplant rollatini rosa. The recipe called for a mix of marinara and alfredo sauce with the filling of ricotta cheese, it was so creamy!
I was concerned that the eggplant might break by rolling it but roasting a little beforehand really helped the eggplant with flexibility. You’re going to want to use a very sharp knife to be sure to cut the slices super thin so that the eggplant can cook through properly.
Tuesday: The Ultimate Thai Pizza
This pizza captured the Thai flavors really well! It almost felt like I was eating a Pad Thai. It goes to show that anything can go on a pizza crust.
The base was a peanut butter sauce with topping of marinated tofu, red bell peppers, carrots and cilantro. The peanut sauce is then drizzled on top once the pizza is done.
Wednesday: Sweet Potato Curry
Sweet potato curry is so filling! It’s one of my favorites because its pretty quick to whip up and everyone love it!
This curry also had chickpeas and a good amount of spinach to add protein and those extra greens we all need more of. Served over basmati rice and a spritz of lime juice, yum!
Thursday: Grilled Mozzarella Sandwich
Wow wow wow! This is one of the BEST sandwiches I have ever made. I don’t take favorites lightly. This grilled mozzarella sandwich is slathered with pesto and layered with fresh mozzarella cheese, tomatoes and roasted red peppers. It is so damn good!
The equipment for the recipe called for a panini maker but I don’t have one so I just made it in my cast iron skillet and pressed down with a spatula. It came out perfect!
This dish will be loved by everyone! It’s creamy, earthy and buttery with a touch of acidity. Linguine is topped with the Marsala sauce which is made up of mushrooms, rosemary, shallots, garlic and heavy cream. The dish is garnished with a spritz of lemon, grated parmesan cheese and parsley.
