Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made. Enjoy!
Risotto is one of those dishes that just tastes amazing every time I make it no matter the combination. Pesto is a favorite of mine so adding it to risotto was clearly going to be a winner.
The tomatoes were the perfect addition with the acid profile and the chickpeas are packed with protein. Everything bagel seasoning never would have crossed my mind to mix with chickpeas but it complimented them very well.
Usually, we have a small salad to accompany our dinners but sometimes I crave a nice big substantial salad as the main dish. There was some leftover farro and candied nuts in the pantry so the brainstorming began.
This salad is packed with all the flavors and textures. It has arugula (or salad greens of choice), blueberries, avocado, radishes, candied nuts, goat cheese, farro and to top it all off a creamy blueberry goat cheese dressing. Yum!
Wednesday: “Sausage” Stuffed Shells
As I often do, this recipe was adapted to make it vegetarian friendly by swapping the sausage for meatless grounds. This recipe was super easy to make and one that everyone in the family will love.
The shells were cheesy, garlicky and the ricotta filling made the dish so creamy.
Thursday: Soul Soothing African Peanut Stew
Angela Lidden from Oh She Glows is a genius with flavors! I own two of her cookbooks and highly recommend them. This recipe is from The Oh She Glows Cookbook but I was happy to find and share it from this Canadian website listed above.
This African peanut stew is amazing! I have made it over a dozen times. It gets the creaminess from peanut butter, a little spicy, packed with protein from the chickpeas. It also has sweet potatoes, red peppers and spinach. This dish should definitely make its way to your dinner table.
Friday: Eggplant Parmesan Pizza
This is probably my favorite vegetarian dinner idea. Who doesn’t love a pizza night? This pizza is the perfect marriage between two classic Italian dishes. Crispy eggplant, creamy mozzarella cheese, basil, parsley, red pepper flakes, freshly cracked pepper and grated parmesan cheese to top it all off.
My partner Jarad and I collaborated on this recipe. He’s a chef and an expert with flavor profiles. We’ve got a lot more deliciousness headed your way in the future!
