Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made. Enjoy!
Monday: Thai Red Curry Noodle Soup
This soup has a ton of different flavors! It was also super easy to make, who doesn’t love that? I swapped the chicken for the Gardein Teriyaki Chicken Strips without the sauce and swapped the fish sauce with a mix of 1/2 tbsp rice vinegar and 1/2 tbsp soy sauce.
I’m sure there is a vegetarian/vegan fish sauce out there somewhere. I didn’t have any on hand so I improvised. The soy sauce and rice vinegar mix worked out great!
Every month I get a huge stack of magazines and came across this delicious recipe in the most recent Better Homes and Gardens issue. I am adding this recipe to the favorites pile because it’s a crowd pleaser. The creaminess from the cashew cream mixed so well with the cheddar cheese and we all loved the addition of the broccoli and the toasted bread crumbs on top.
Sometimes mac and cheese can be too cheesy so this is a perfect alternative if you’re trying to limit your dairy intake but don’t want to sacrifice the creaminess and flavor.
Sheet pan dinners are one of my favorites because they are so easy to whip up and everyone loves them. You can’t go wrong with roasted vegetables.
The only swap I made was the sausage. I used Field Roast in the smoked apple sage flavor. It is amazing and my all time favorite sausage alternative.
Thursday: Mushroom Farro Soup
Another magazine find but this one is from Bon Appetit. There are some great textures in this soup! The farro compliments the mushrooms and celery very well.
I always serve my soups with toasty buttered bread, this time we used ciabatta.
Yum! Cheesy, filling and super easy to make. This recipe is super low carb so anyone that is trying to limit them, this is a great option!
I swapped the chicken for cubed tofu and just mixed it right into the casserole before baking.
