Welcome to the weekly vegetarian dinner recipes series where my goal is to help you spend LESS time searching the internet for new vegetarian recipes so that you can enjoy MORE time cooking or doing other things that you love.
We’re in the fourth week.
Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made. Enjoy!
Monday: Classic Stuffed Peppers
These stuffed peppers were amazing! They were packed with flavor yet simple with the ingredients. The peppers steamed really well while cooking in the oven and were nice and soft to cut into.
We had two each and it was plenty filling for dinner. Everyone loved them.
Tuesday: Creamy Coconut Lime “Chicken”
Yum! I adapted this recipe using tofu instead of chicken to make it vegetarian friendly. It came out so creamy and delicious! The tofu was prepared the same way as the recipe suggested.
My favorite Tofu to use is the Nasoya super firm tofu because you don’t even have to press the moisture out which saves a lot of time.
The dish was served with white basmati rice.
Wednesday: Creamy “Beef” and Shells
These creamy, cheesy “beef” and shells are so decadent. What a treat! This dish reminded me of American chop suey but much better.
This recipe was adapted to make it vegetarian friendly. I used these meatless grounds as a substitute for the beef and it was the perfect swap! I served this dish with a side salad and my family gobbled it right up!
I always like to have a soup at least once a week, especially in the winter months. When I came across this recipe I knew I had to try it!
It’s a creamy and very hearty mushroom soup. I love the texture from the wild rice.
The chicken was swapped for small cubed tofu. Use half of a block of tofu so that it doesn’t soak up the liquid in the soup.
One more very important thing, the soup was served with buttery toasted bread, yum!
Friday: Hawaiian BBQ Pizza
This pizza was such a hit! My family was upset that I didn’t make two pizzas. This one will definitely be added to the favorites.
Also, I would recommend using 1/2 cup of BBQ sauce because 1/4 cup just wasn’t enough to fill the whole pizza.
