Below, you will find a brief description and any tips I might have for the recipe or substitutions that were made. Enjoy!
Quesadillas are my jam. They are crispy, “meaty”, juicy and packed with flavor. These veggie quesadillas are filled with caramelized onions, roasted red peppers, melty pepperjack cheese and a sweet corn + pinto bean mix. Don’t forget the avocado crema and salsa!
Tuesday: Tomato Soup
Believe it or not we just had some snow fall but it’s April in Maine so I shouldn’t be too surprised. Needless to say, a nice hot soup was definitely on my mind.
This is by far the easiest and most delicious tomato soup I’ve had to date. There is barely any prep involved and the soup is so creamy considering it didn’t have any cream! I swapped the chicken stock for vegetable base.
Wednesday: Easy Vegetarian Sushi
This vegetarian variation of sushi is packed with avocado and cucumber and is my favorite go to recipe. It’s quick, easy and always a winner. The hardest part is trying to get the sticky rice off of your fingers while assembling!
This pizza has yum written all over it! Juicy heirloom tomato, herbaceous artichokes, fresh basil and sweet onion sitting on a bed of rich and creamy goat cheese. Enjoy this crowd pleaser for your next pizza night!
Friday: Veggie Burger
This veggie burger was so on point! I couldn’t believe how well it held together! The flax meal, brown rice and breadcrumbs were great binders. Protein came from the black beans and I loved the texture that the cashews gave this veggie burger. I never would have thought of that!
